Had a bit of a search but couldn't find much,
I have an 04 SS crewman that when you release the clutch to take off it dies in the arse for a second or two then takes off like normal. Driving up a steep hill becomes an issue, & sometimes just the use of power steering while parking can give it trouble. If you keep the revs up and the clutch in a bit more it helps but can't be too good for the gearbox/clutch...
Other than that the engine runs fine and is quite healthy in all other areas. I was thinking it could be the clutch or gearbox maybe?

Sounds like either the gearbox or the brakes are locked.
It doesnt sound like your clutch or preasure plate but eventually you will burn it.
How hard are you dropping the clutch lol
Either those or its running rich and possibly flooding it.

something locking up makes sense now that you mention it, it feels like im dropping the clutch with not enough revs. I try and chase the revs back up with the clutch which works but just doesn't feel right, i've driven plenty of manual cars and this is the first time i've come across it.

is it cammed?
When was your last major service? old plugs and leads, clogged fuel filter, dirty injectors, low compression, poor fuel quality will contribute to all of these.
What fuel economy are you getting?
No cam, plugs and airfilter been changed recently. not sure when the fuel filter was last changed...
fuel economy is around 13.5L/100km for a mixture of stop start and highway
try the fuel filter, thats pretty good economy though, but im guessing mid range torque is ok so its no surprise.
Take a few moments to put the car up on stands, place the car in neutral, and with teh hand brake off, move around each of the wheels and spin them. They should have very little resistance. If not, this could be a cause.
also, is this something the car has always done, or is it something recent?
When was the last trans and diff service?
Does it only do it when cold, or only when hot? or all the time?
is it worse with the aircon on?
have you reset the ECU?
It's been like it since i bought it, being my first v8 i just assumed the clutch was a bit harder to get used to.
It got worse today, and it feels like the engine is missing in low revs and underload so I'll check over all the usual things regarding that kind of a problem plus the other tips you've mentioned

pretty sure the OP said he was under powered, Not that his ute was so hectik and such a weapon that if he trys to drive his revs bounch on the limiter and before he knows it his tyres are hopping all over the place
Reset the ECU and that got rid of the misfire but the original problem still remains, maybe a little bit better but not much. The more I think about it, the more I lean to an engine problem like fuel or spark. So next on the list is the fuel filter, get the injectors done, and clean out the throttle body.
Is the fuel filter at the back underneath the tub on the crewman or are they intank systems?

yeah its pretty normal for a car to feel a little less "goey" when the ac is on.
On the crewman its at the front of the tank at the drivers side.
Great that'll be easy to change.
Something of interest...when the engine has been reved it drops far below idle for a second or two. That's why it nearly stalls when parking or going up a steep hill
im thinking that the car really just needs a good mechanic and/or a really good service/tune up.
Plugs, Leads, oil, coolant, temp sensors and oxy sensors, trans service, THE WORKS.
