Because i dont want to spend all that much on rims, do you guys think Chrome/silver interceptors would look better on a white Vy? or leave the standard Berlina rims on?

IMO Silver ceptors with centre caps and dress rings would look sweet mate, even though its not recomended you could squeeze some 235's on the back and have it sit under the guard with some nice ssl springs or something similar, would look sweet i rekon.

Don't bother going 225's or 235's mate. The price difference between those sizes and your "standard" 205 is ridiculous. Plus it's an extra 2 centimetres of tire and the only difference you will have is you won't have massive sidewall bulge.
