I've been search for ages for a set of rims I like. Every time I do, they're either 4-stud or ridiculously expensive. I found a set I like, but they only come in 18x7.5, is that too narrow?
Is it gonna affect performance and/or safety?

Your VY Acclaim in Series 2 was released by GM with 15 x 7 inch rims as standard for both the sedan and wagon. So you are going slightly wider.
As long as the new wheel is the correct fit for the VY hub and studs etc., 18 x 7.5 inch rims are perfectly fine and are legal. Definitely not too narrow. Run them with 235-40-18 tyres which is the standard size tyre used on the series 2 Commodore SS (18 x 8 rims) and you will be fine. Just make sure the tyre you select meets or exceeds the minimum specified load rating for the VY. Most do in that tyre size. Just be wary of a lot of cheap imported junk rubber.
