Default v8 reving high, stalling, overheating?

Hi guys,
Purchased the car a little while ago and all seems to be good. Started noticing a few days ago that sometimes when you clutch in, it holds its revs (say 1500-2000) and then drops shortly after. I also noticed that sometimes it drops its revs too low like 500rpm but then they pick up again.
Today however it was quite hot (about 37degrees) and i did a lot of slow city driving. I noticed that when i clutched in, the revs would be at about 1500 and go up to 2000 and hold (they would hold a lot longer than normal!). They would drop at times, however other times i couldn't be bothered waiting and jabbed the accelerator and they dropped. Also, when it was stationary and i reved it a bit, sometimes the revs would drop too low and not pick up, and the car would stall.
Is this normal????? Could it be overheating (i have the turtle shell cover)?

Edit: I should re-phrase. I don't mean overheating as in overheating excessively, i mean just struggling with the very warm temperature. The temp gauge is in its normal position.

Not that i know of, got it only recently 50,000kms on the clock. It has cat back exhaust and SS inductions intake.
