wondering if its at all possible to change the displays around so the vy dash display looks more like the ve dash with the numbers and letters lighting up and not the background.

you would need to fiddle with the polarizing film, which is layered on top of the lcd. Usually you would have either flip it over (unlikely) or turn it 90 degrees.

Either way you would have to completely dismantle the lcd module to the bare glass display and i suspect the polarizing film would be glued on, so you would have to slide a razor blade between the film and the glass display. Then you would have to replace the film.
