Plenty of threads to check through mate on exhausts for v6 development, have a look around so we don't all go repeating ourselves!
But yes, 2.5 inch is the general way to go.. Mine cost me $1100 installed including a set of pacemaker extractors and sounds awesome, I get commented all the time how deep it sounds and how it sounds like it's growling.

I am also looking to get a 2.5" cat-back system. I am looking to get a lukey cat-back simply for sound. If you want performance as well, get some pacemaker extractors to let it breathe a bit better. I have also heard redback systems are good too.
As for pricing, if you want stainless steel basically double (and then some) your original cost. A mild steel 2.5" cat-back will cost around the $400-$650 mark (I think). Stainless will be from around $900-$1500. I think for a V6 just a single pipe would be better because twin pipe would drone but thats just what I have heard.
Here's a link to the sort of set up I want.

Depending on where you are, I can do a single 2 1/2" mandrel bent system for $340 including freight.

Do you supply brands such as lukey? I'm not to sure on how the whole thing works. Do you supply the pipe and then add the mufflers to it or does it come as a set, being one brand of pipe better than the other. As you can see, I'm an idiot when it comes to this.

But it does sound better. As long as it doesn't drone it will sound good and not be to try-hard-ee.
I dont spose people can post links to videos of there exhaust tones.

I can supply just about any brand. It will come as a bolt on unit, front section and rear section. Is yours a series 1 or 2?
