JHP Enhancements sell them, not cheap though at around $650. Holmart possibly too

If your VZ has climate control they are a different binnacle to non climate control. If you dont have CC you can fit one from a VY clubby also

looking again on ebay, and seller are talking about a differnet fint between ss, sv6 and hsv gauges? is this true or will VZ HSV gauges fit in a VZ Sv6 dash?

anyone who can steer me in the right direction?

You could download the VDO instructions for the binnacle they sell, its not gonna be exact but will give you an idea.

PS Id be surprised if you can go into Holden and buy a brand new gauge holder for $65, I think they are closer to $250. There is a seller on ebay selling genuine holders for $198 too
