Have been driving utes in the bush for a few years now, and in a nutshell, it all depends on how much you are willing to spend, and how much you are willing to detract from the look of the front of the ute.
HID lights are by far the best (a type, as opposed to a manufacturer. There are a number of companys that produce them), and use gas discharge arc (or something sounding more technical), but are about $1000, and quite large.
Lightforce produce a great light, called the "Striker" i think. they retail for a bit over $300, and are excellent quality for the money.
On my vz ute, i have an ECB nudgebar with Hella Commet FF 200's. i had the rear of the lights painted to match the car, and when its all said and done, looks pretty good, but i have sacrificed light quality. in the end, my lights are only a little better than the cars lights, but i have further enhanced them by upping the wattage on both the driving light globes and the car globes.
As far as the mounting, i would think its 6 of one - half a dozen of the other. Tabs are generally provided on most bars, and would be easier than boring a hole through the bar itself. Personally, i like the ease of the tabs. makes mounting and adjusting nice and easy, and sets the lights a little back from the front of the bar, providing them with a little bit more protection from objects that may get in the way of your vehicle (foxes, hares, birds...doesnt help much with roo's!
