My VZ wagon just ticked over 82,500 kms, what exactly do I need to get done on the 82,500 kms service? (apart from the obvious oil and oil filter change).

Its all in the service manual....
all you need for that interval is oil and an oil filter. that is all they do and thats all that is in your manual.

Actually all that has to be done on the car for the 82500km service is:
*Inspect front & rear pads for wear
*Check all brake hoses & pipes for condition attachment & routing
*Inspect steering system for damaged, loose or missing parts, signs of wear or lack of lubrication
*Inspect ball joints & dust covers
*Inspect all CV joints for damaged or torn boots & propshaft rubber coupling for tears & splits
*Inspect light operation
*Brake Fluid - change ever 2 years (regardless of km)
*Clutch Fluid - change every 2 years (regardless of km)
*Coolant - change every 5 years (regardless of km)
According to the book this will take 0.4 hours
Doesnt mention anywhere about changing oil or oil filter.
The Blue One
The intermediate services dont include oil and filter.
The cars have the engine oil/filter changed every 15,000km.
Doing a service at the halfway point as said just ensures the ongoing safety of the vehicle. Although when it comes to things like brakes you should be being notified as to if your brakes will, under normal conditions make it to the next service without being required to be changed.
But other things which can perish or unexpectantly fail can be picked up on.
