The exhaust shouldn't have to much of an affect on the cars response, have you done a compression test at all? If its down on compression it will definitely feel like a slug!

Immortality, the tune was as u said only tweaked because the bulk of the tune was already there. As ive said trying to nut out the core problem but what ive done so far has pointed anything out. Cheers for the pointers though, ill keep chipping away at it until I solve it, wont give up easily!!
