2 gaskets on water pump, yes or no?

Water pump came with two gaskets and I think the last one did two. Question are both gaskets meant to be fitted or just use one? Last time I used one and it never leaked from the gasket, just the weep hole.

I've only ever used one....Never considered using 2 gaskets
As you'd well know, having clean mating surfaces and a thin coat of sealant does the job....No need for 2 gaskets

I believe one gasket is for the early series Buick blocks and the other is for later/Ecotec blocks (they use the same waterpump I believe). The gaskets should be slightly different, use whichever one is closest to your original. Unrelated, but a good way to avoid leaks is to torque all the bolts to the same spec.
