When doing brake pads can I push the pistons back in to the calipers by putting a clamp on when the old pad is still on it so it pushes both pistons in at the same time??

That is a sensible way to do it, pushes both at the same time and keeps the pistons square to the bore.
Just make sure the other caliper is still on the disc when pushing the pistons back in or the other psitons may push out while pushing the other side in.
