Went to start the ute this morning and she coughed, ran a bit rough for a couple of seconds then then seemed to run fine.....but then on came a beeping sound and "check engine" light came on.

Turned the car off and restarted and the light and beeping was no longer there.

My question is...If the check engine light no longer illuminates, is there no longer a problem?

Does it only give you one warning that something has failed, or would it illuminate every time you started the car until the problem was fixed?

Likely it will reoccur, rare for a "hiccup" in the system.
If the fault was there still, the light and chime would remain.
Some faults will show the lamp for 5 starts after the fault occurred.
Others reset after key off and on as you've seen.
Remember, the light will come on when any sensor sees a voltage which is outside its parameters. If it wound over slow, it could be as simple as a lazy battery :)
Check the codes stored either way and post it/them up.

Being a VY model I don't think I can pull any codes myself without Tech II diagnostic gear.

I'll book it into the mechanic. Thanks.

All you need to pull codes is some cheap ebay adaptor and a laptop or bluetooth phone. Read around on this forum to find out which one works on a VY V6, OBDI or OBDII or ALDL........ I dunno about V6. I bought my cable for $14 and downloaded proscan onto laptop. Pulls and clears codes. Wayyyyyyyyy better than paying mechanic $50 for 30 seconds work.

A lot of the info derived using the free version of that setup you can get from the lcd display in the instrument cluster in the VY (like engine coolant temp, rpm, battery voltage, fuel usage litres per minute etc.). The throttle position sensors and oxygen sensor info you can check backprobing using your trusty multimeter.
I think I'd have to get the pro version to have something useful pulling trouble codes.

Looks like there's no inexpensive way to read them if you own a V6 version of the VY.:(

Ended up getting an autel md802 diagnostic scanner.
Plugged it in, selected VY and ran scan. Got a code P1361 and message 'slip ring circuit failure'.
So I cleaned the ignition key and the ring around the ignition switch and the sneeze while starting has disappeared.
