Where did they OP say Alloytec or even V6? His profile would indicate L98.

Having said that, I've owned 2 Alloytecs over the years and neither of them used a drop of oil.

My bad, I hadn't taken any notice of which model VE the OP owned.

Most likely gone thru the pcv system into your air intake mate, LS engines are known for it

I use 5w-40 in Sydney so I'd think you could go a bit thicker if you wanted to. 10-40 at least but that doesn't answer the question if where all your oil is going.
Do you push it really hard? ThAt can cause fresh oil up into the air intake pipe which can then dribble into the throttle body and cause smoke like you have seen. It might be worth looking inside your air intake pipe on the front of the engine just to see if it has oil in it.
Which 5-40 are you using?
I use Penrite 5W-40 HPR5
