A 2 and a 1/2 inch catback exhaust will cost you around the $250 mark, I cannot comment on the best place to get one in Sydney though. Im assuming that the moldings that you are talking about are the strips that are on the doors, the strips are easily removed by running a piece of fishing line behind the strip the sikaflex (glue) is a pain to remove though. The best way to remove the sikaflex without removing any paint is to use a Caramel Wheel. A Caramel Wheel is a rubber wheel that attaches to a drill. Caramel Wheels can be hard to find, your best chance of finding one is at a body shop supply store or at a panel beaters.

Yes that price includes the muffler and fitting.

Removing the sikaflex is a nightmare, like I said your best option is a caramel wheel, just don't hold it in the same spot for to long otherwise you will burn the paint.

your looking at replacing everything bar the extractors?

Is anything wrong with your Cat converter? because on a reasonably stock car you may as well keep the Cat and spend the money on extractors.
