does any1 know how to change that ugly looking green backlight on the a/c or speedo, to another colour, has any1 done it

If it is like previous models, it will requre a change of globes in some parts of the dash and a change of tinted perspex in others.

In short, a lot of disassembly and mucking around.

Apparently VY/VZ have LEDs instead of globes, so its just a matter of swapping the green ones for whatever colour you prefer.

The thread on the other site is really about installing a car PC, the LEDs were a side track. He didn't go into too much detail other than its a matter of changing the LEDs for whatever colour you want.

It is simply a matter of taking the dash apart. You'll need a special tool to remove the radio (which you can get from Holden and/or car audio specialists), but apart from that just a philips screwdriver and some time/patience.
