High Temp Warning Light & Chime

I have done a search on the forum and couldn't find what i was looking for so here goes

My vr berlina did something strange the other day that it had not done before the temp warning light and chime came on not under heavy load but under a load and then went out any way in the same night i was driving up hill and it didn't come on.
In the last few weeks to a month i have changed the thermostat the water pump and the temp sender and temp censor any help would be great.

I'm just wondering if you have an air lock within the cooling system ? if so it will have to be bled out manually, but it generally will do over time anyway.
