The mounting clips are famous for ripping paint off. Also, the protectors can buffet around at highway speeds and work like sand paper on your paint - even worse if there's anything trapped under it - and they are massive debris traps. I hate the things. I will risk a stone chip every time.
There are clear, adhesive protectors available which aren't bad - by clear, I don't mean invisible - but they are flexible and, being adhesive, there's no gap between protector and paint, so nothing to get trapped under it. I'm still not a fan of them - but I don't have an issue with getting my bar resprayed once a year - and bonnet chips are generally pretty painless to touch up - or respray if necessary.
The way I see it, you might get a stone chip -but you WILL get damage from the protectors.
