Wondering what ratio roller rockers would be best for-
    1. A 1997 VS Acclaim, all stock apart from LPG and a mace CAI?
    And for
    2. A 1994 VR SS 5lt with stage 2 shift kit and a 253 mild crow cam?

    Cheers

For the V6 1.9:1 all round are fairly good.

As for the V8, there aren't a lot of options other then than the YT standard ratio 1.65:1 or you can now also get 1.72:1 rockers as well

Go Mace ,they work, well as mentioned for your V6 1.9:1 would be the go , if you upgrade your exhaust the benefits will be greater .

And for both types, will there be any need for anything to be machined or altered to fit them?

nope , with the mace ones they are a bolt on mod , if you have a look on the search thread there are some good helpful instructions on installing them

Bang for buck the MACE 1.9 rockers are the best way to go. As mentioned above, add a good catback system and other MACE intake mods for even more gains
