Bore the 179 out to 192 for a few more cubes.

I recon I'll keep the 179 and just give it a rebuild.
here were the specs from the seller:

HR disc brake front end
Automatic power glide
179hp bored out to 186
Star fire rods
Roller rockers
Redline inlet manifold
Single Weber carb

Nice score! Worth the beers!
As has been said, the best way to find out what panels you need (if indeed you do) is to contact the relevant club.
Even if they are "restorers" they will help get another oldie back on the road.
Yeah, love the temp guage!

Oh it's got red motor!!!

Cool maybe I do know something about it lol.

If not going to go crazy on it just cool reliable cruiser the 179 that have will do just fine...common diy budget mod was weber with adaptor from falcon & hei dissy from blue motor.

Although stromberg or varijets were ok hei dissy is a must.

Looking at the photos, it could have 186S headers and inlet manifold.
But the inlet manifold doesn't seem to have the water heated plumbing there, and the carby was a 2BBL Stromberg, so maybe not..
The hose to the PCV valve should go into the inlet manifold, not the exhaust header, or is it just hanging loose.
The alloy rocker cover......... if it isn't leaking, it is a 1%er. Getting the cork gasket to seal on those was a real head bang.

Motor sounds like a cruiser build, which is fine..Hopefully just giving it a quick re-ring and new bearings should see if through for a while.

As for panels....I know a wrecker in S.A that has this era Holden.....

Here's a google maps link to the site If you follow Heintze Road and Schrapel Roads, it will give you an indication of the size of the property and what he has....If you need parts, holla, I'll be more than happy to help out...IMA it's not just this era Holden he has....He has shite loads of other cars as you might see if you look :)
