I heard on the highway patrol TV program that when the oversizes tyres and rims are fitted it throws out the speedo reading and that it's possible to have it corrected so I'm wondering if anyone has had this done and where would one go to have it done.

What sort, and model car??????? It is if the computor can be reprogrammed via the diag port(GEN series)

can also be done via a Speedo corrector kit.
which I do believe Jaycar have and you build.

I thought all modern cars have a computer and electronics, 2004 Commodore 215/60/R16 95V

My Commodore is my first ever modern type car all the others in my 64 years have been pre 1970.

And you, probably like most of us "older" people, wish we still had some of those pre 70s cars. I certainly do.
Although, most of my early cars were 70s-80s. HD, and HK GTS in the 60s.
