Temperature issues VS V8

Hi everyone can anyone help
The temp gauge on my VS V8 ser 1 is reading high (see attach 1).
Temperature at block and thermostat is 82/84 (see attach 2).
Engine has had a full rebuild including sensors and did not have this issue before. I have added a 140amp alternater in the rebuild.
I also had pod gauges (electric SAAS) added and the temp is reading high over 100c the volts is reading under 11v (see attach 3).
The Engine bay was also detailed.
BCM was replaced 12 months ago.
I'm hoping a poor earth but where.
Any advice

There are different temp sensors. The first is a 2 wire sensor for the PCM and the 2nd is a single wire sensor for the dash gauge. There are different single wire sensors, get the wrong one and it will read wrong.

Did the engine bay get painted at all? Make sure there is clean metal under the main earth points.

Not sure I understand your problem, the temperatures you describe don't appear to be excessive. Perhaps you need a new clutch fan unit if you are concerned about the temperature. Refer to the item below from the Holden VS Service Manual:
