Well my options just went down considerably.
I rang two local AC mechanics and both said they would NOT do gas on a second hand compressor.

WTF. Now I cant even get a bargain $49 from a wrecker and get lucky

Go to someone else and don't mention SH compressor. Hate to say it M8 by why would you tell them anyway?? They would have limited warranty on the work regardless; because the system is so old any number of things could be faulty and it's ultimately going to take a regas to see if the compress is working or not and at least a fill with nitrogen to see if you have any leaks.

They asked why it needed gas. Pretty hard to lie.
Any suggestions of places Adelaidians, south of city preferably.

Try Perkins Auto Repairs. Fit the compressor and new seals yourself as you said you would. Just make sure you take tape with you to seal the pipe holes immediately upon removal from the wreck. When he asks; tell him it's not operating that's all you need to say. He will suck the moisture out, regas it and in a few months if it has stopped working he will tell you what else you need to have done. If the compressor you fit is faulty he will tell you once he gas' it for you and you hand over the $180 for the regas service. His thing used to be gas it up and check back in a month to see if it is still working.

The wrecker degasses every car that comes in, so I can remove no problem,.

Winner. Called, Nice guy, will gas for me, no guarantee he said but $130, plenty of advice, like look for contamination in my hoses, if there is any then the contamination from the old one might be going through my system and ruin the evaporator and such, therefore more expense

Tape is to keep any moisture or dust getting inside. Only takes 30mins of exposure and you can have problems.

So, how do I make sure the gas is all out before I remove my own compressor?
There is no coldness so I presume there is no gas in there
