Try tightening all hoses, then get the engine up to temp, then re-bleed it. Do this (bleed) with the heater on high.
Also after going for a drive (going to shop, whatever) bleed it again.
Do this 2 or 3 times, or maybe more. No air may not come out of it, when bleeding, but by doing this a few times, you will eventually get all the trapped air out.

You've replaced the water pump & heater tap haven't you?
Yes both replaced
Also heater core is bypassed

When you said you threw a *** load of water in it, you meant in the radiator?
When it was overheating, did the fans come on?
What colour was the water in the overflow bottle? Was it at the right level?
You could have had a inlet manifold gasket leak - intermittent. When they leak usually oil leaks into the coolant. It will leave a tell-tale "mud" deposit on the water level dipstick.
But my money would be on a blockage that's found its way to somewhere vital, maybe dislodged during the flushing?
And it was lying in there until the sustained high speed increased the water flow until the blocked moved.
