Plenty of NSW registered Crewmans with trays around. Must be legal.

There’s no need to do anything more than put a tray on. They are a cab chassis.
If you thought it was a good idea to convert a regular Ute to become a one tonner, then yes, they would be quite interested to see engineering documents and the like.
A tray on Crewman was an option at purchase.
