I gonna have a crack at this by removing the intake manifold etc

The thermostat will come with a thin metal gasket, am I best to use some kind of sealant with the gasket, or will the metal gasket be sufficient?

Dont want to have to do this job again :)

I usually use sealants but a Dealer would be the best people to ask if no one here offers advice.
