VE V6 coolant Level Drops in Engine

Has the coolant system been pressure checked?

yes. No leaks evident. Also the hose to the expansion bottle has been pressure checked for leaks and has none.

all you can do watch the temp gauge top up the coolant and check where she is parked for any leaks

Be brutal, try pressure checking the system with the engine cold.
