I know you probably have already tried or thought of this, but its not the normal VS sticky gauge problem is it?

My Petrol and Temp Gauges on my VS Caprice regularly stick. A good tap and they are fine. Definitely not this?

Not sure if it is the same for the V8, but on my V6 its located just below the thermostat outlet, for the top radiator hose. Every car I know of has it in this position, so chances are thats where it will be on yours. It will be a brass coloured tube, with a thin black plug with a thin wire attached to it. Check the connections, the gauge works on Earth, so what you can do is unplug the sensor, and then connect a small jumper lead between the lead, and the negative terminal on the battery, if the gauge itself is working, it will read HOT, and if thats the case, all you have to do is replace the sensor, about $8.00 from Holden.

Cheers for the sticky gauge comment! I just finished hooking up a thermo fan, started the big girl up and no temp gauge. One tap and Bam!we have temperature.
