Vt engine light randomly runs ****? turn car off and its fine?

Real big chance it's only the T.P.S (throttle position sensor) Fairly inexpensive and easy to fit,from memory about $65 Good Luck

 

My sons vx spak 5 speed manual the same problem, as soon as the engine light comes on it runs like ****, replaced one of the knock sensor, the knock sensor if not working correctly will retart the motor and run like a dog. the vx have 2 knock sensors one is near the starter motor the other is on the oppsite side roughly the same area. knock sensor $81.
the car runs well now.

It might be worth checking to see if any error codes are logged in the ECU seeing the engine light came on, it might give you an idea as to whats wrong. If you dont know how to do this simple error code test, check out the link below, its heaps easy and only takes a minute or two to do..
