Narrowed it down to a cracked radiator. It was nearly impossible to tell where the leak was coming from on a flat surface. I jacked it up just before and there it was, green fluid coming from the bottom of the radiator leaking a fair bit too.. The next step is either replace it or treat it some how i dont know...

unbolt the fan, 2 clips, 2 hoses and 2 (maybe 4) trans cooler hoses to undo, and its out.

theres a step by step guide written up somewhere on here

Is there a way to test the water pump without taking it out?

I'm having the temp spike and drop issue as well but no sign of leaks. Replaced the radiator about a year ago and the cap 2 months ago and I'm going to replace the Thermostat tomorrow.

No real easy way to test the pump without removing it and inspecting it. If its a very quick spike in temp that comes back to normal temp just as quickly...its probably just air in the system. So u will need to bleed the system properly.

Thanks for the advice.

Iv'e replaced the thermostat in the VT and installed a new radiator in my VS (crack under left lower mounting point) and bled both of them while parked on a slope so the radiator cap is above the bleed nipple and after 2 bleeds both cars are running perfect so far.
