Doing the 100,000 service on the vt and just wondering is there anything else i should do other than what the manual. I know its a major service so i normally do them myself so i know the main things to look out for. Will have the use of the G/F dads workshop so yeah.

Will change -
oil
air
fuel
plug
lead
radiator cap and flush system
diff oil
g/box oil
Check brakes - there fine anyways.
check batt
will do a wipe down of the under carriage and check for rust and watnot
does the tail shaft have grease nipples? if so will do them

So any other suggestions while im under there?

Get some spray lube and spray the handbrake cables where they go into the outer casing. Put a small dob of grease on all the door stays and give the hinges a light spray with lube. Check to make sure your brake fluid is clear and not murky. (By clear I mean that the colour is clean.) Take the intake tube off the throttle body and holding the throttle open, wipe it out with a rag. Make sure the battery is topped up with distilled or demineralised water if it's that type of battery. Also at every service I do a code check to make sure nothing has been logged. If you wanted to you can also check the alignment of the headlights.

Yep. There is more to a service than just changing stuff. I like to lubricate everything that moves, including seat runners. Check that everything turns on and off. It's all about maintenance, keeping things clean and free moving and everything working as it should.

wiper blades? check serpentine belt? I would flush brake fluid.
don't forget tablets for cooling system.
Check adjustment of brake switch, clean battery posts/lugs
check tyre pressure inc spare, make sure jack and wheel brace are there
If this is your first service on this particular car I like to make sure every fuse is the correct rating
