My VT runs under half; with a new radiator, water pump, thermostat, piping and cap.

you need a thermostat otherwise your car will EVENTUALLY boil, the thermostat as well as circulating coolant also allows the stop of flow which in turn stops heat soak of the whole cooling system.

to get an exact reading of water temp hold mode and up on the dash controls for 5 sec while starting the car this allows the car to go into diagnostics which has a digital readout of the temp gauge.

Macanic told me i don't need a thermostat
I thought they are used only to open up when water is hot
Not having thermosat can make my car boil???

Thermostats are there for a reason, so it's a good idea the keep it in. I think the engineers who design these cars would know a little more than your mechanic.

i agree with you
But is the thermostat only so the car doesn't run to cold ????

Basically yes. Also, in winter when you need your heater you will have problems getting it hot.

My VT runs about 85-89 degrees C.

It has been as high as 105 in city peak hour on a 35degree day.
