I have a vl 5ltr the first time you try to start the car it take time to cranks over but after it start the fist time there is no problem with starting after that.
Also it has a problem where it like it starving for fuel you can be driving along and put the foot down and it like you have kangaroo juice but it does not happen all the time.

Always found on initial start up with the carby 5 litre I would have to give the pedal a few pumps and then hit the key, and sometimes, very rare, it would start first time, so what you are experiencing is, imo, normal for the carby version.
As for the flat spot on acceleration it could be carby ie accelerator pump, vacuum advance, or both, or maybe even lack of vacuum to advance the dissy.

I found with the carby it needs one pump (to turn the choke on and prime some fuel).
