Just a couple of photos of the dash displays which alternate during the problem.
(yeah the dishonest dealer or previous owner had also switched the dash, with one out of an auto...)

This might be a long shot.....the gauges look like they're out of an SV6........................is there a chance the different engine/transmission configurations are conflicting between the gauges to the PCM??

Yeah that is a real possibility, a mate who works at an Ultratune had suggested this but I'm not prepared or in a position to buy another cluster just to try it, the car's already got a new throttle body it didn't need...

Update on my saga;
I spoke to an older mechanic who is very experienced and logical, told him all the symptoms, answered his questions and discussed possible causes. He suggested I try unplugging the air-flow meter while safety mode was active to see if this made any difference, he said that the computer would just go to a base setting without a signal from the AFM. Unfortunately each time it failed after it was either too bloody hot to get my hand in there especially with a fast moving belt only cm from my fingers, or I was stranded in a precarious spot and just had to get moving again quickly. Anyway I unplugged the AFM the other day and have driven the car for a few days without any issues, it doesn't perform quite as well without the AFM in circuit particularly on hard acceleration, but did run very smoothly. Could this be the component at fault, sending the PCM the wrong information and triggering throttle position changes? Are there any detrimental affects to the engine of running without the AFM connected?
