What tyres to get for 15x7 interceptors

Stick with 205's. Less sidewall bulge and usually cheaper. Search it's been covered dozens of times though.

As above, Holden spent millions of dollars and assessed 205 as the best size for that wheel relative to cost. If you must, you can push out to 215.

Choice of tyre? Turanza's ER series are pretty good, they tend to favour dry conditions. On my VT I ran Pirelli P6's, they were quite a good tyre. For 205/60 they cost me $104 each.

It's a 15x7 rim, not a 15x6 standard rim. I would prob go with a Bridgestone in the 225/60/15

Can you tell me why you would use a more expensive tyre for all of 2 cm of width? Wouldn't the money you waste going 225 be better spent on a higher quality tyre in 205?

Bridgestone 225/60/15 on my 15x7's, I have had 205s on my 7's that came off my original 6's but they looked rediculous

all due respect but
15x7's never had 205's fitted from factory, I think you are getting confused with 15x6's that generally had 205/65/15 and defiantely not 205/60's you had fitted to your VT
