Burning oil 5.0L

Looking for possibilities last year I pulled my engine out to do frost plugs and sump gasket trouble is before I pulled it out it was a good runner after reinstalling it I noticed it was burning oil now I'm pulling the engine out again I've noticed the throttle body is caked in oil any ideas why this could happen?

could be blocked or stuck PCV valve and crank case fumes coming thru the clean air intake for the engine , check and clean PCV , or just excessive blow by from worn or stuck rings .

You didn't install a pair of fancy aftermarket rocker covers did you? Guys on the Holden 6 forums have been caught like that because many aftermarket ones don't have a proper baffle under the PCV valve causing it to suck out lots of oil droplet.
