I want to buy car stands, I have a 2008 VE SV6 Commodore. Would 1200kg be suitable to hold vehicle?

not quite in my opinion.

the car weighs 1800kg (near enough)

you'd need 2 sets of the 1200kg stands to hold the whole car up.

What about 1 set of 2000kg or 1 set of 3000kg or 2 sets of either 2000kg or 3000kg?

lets just say the car weighs 000kg, you've only got to hold 500kg each corner.

I've got 2 sets of 1500kg. so holds up 750kg each corner.....good safety net.

that's the rating per jack stand so yes 1200kg rated stands are plenty. You normally only ever jack up half the car - front or back at a time any way.

The car weighs 1800KG total.....The jack stands are rated to hold 1200KG per corner.....

So having 450KG weight per corner with the car, 1200KG would be more than enough

1200 kg stands are plenty strong enough for 1/4 of a Commodore. More important is the way you use them and not putting them anywhere they might shoot out . Metal to metal is very slippery.
I only ever jack the front end or back end, or just one wheel off the ground at a time. I don't trust the car on 4 jack stands ever, partly because my driveway is on a slope but I still don't do it on flat concrete.

ive got mine on 4 stands one each corner chassis point been like that for year and half i have no issues working under it as it dosnt budge at all, depends how high u go mine is only bout a foot high, i wouldnt use them at the highest setting as they loose stability but 2-3-4 notches up is fine on a flat ground
