If it had side airbags and front airbags from factory, all must be working correctly and no error lights or codes in order to pass roadworthy.
Secondly, in order for any insurance company to pay out or honor any claims, the airbag system must be "as factory" and be fully operational and show no signs of tampering. Or they will walk away from you.
If the car is involved in a side impact and your front passenger is killed from traumatic injuries, the coroner will order the vehicle be inspected- they will go through it with a comb to see if the airbag light was manually turned off or the side airbags were not operating properly/removed. If the coroner finds you've bodgied something somewhere, you'll be up for some very serious lawsuits for the injuries/death of the passenger.
So I'd strongly suggest this is not one of those "Nah mate, she'll be right, just make it so the light goes away.." sorts of things.
