I have just bought a wm statesman series one. I believe the factory head unit will not support reversing camera. I have bought a new alpine head unit that is supposed to be plug and play for Ve commodores. With hvac controls all in one. This is the first time I'm pulling a stato dash apart. Anyone have any advice before a create a massive paper weight

Not very difficult, everything basically pulls off.

You'll need to:

Remove glove box
Remove kick panels
Remove Dash panel under steering wheel and headlight switch

For removing the radio itself, you need to pull the face off from the bottom (feels like you'll break it but you won't) and then remove 4 screws to remove the unit.

There's a full install guide over on carmodders.com you can look for.
