Some parts are really hard/close to impossible to get out without breaking them. The dash, from the instructions I've read seems to be more time consuming than awkward and mostly involves unscrewing different parts. I don't have the link with me but there's a topic on converting an entire VN dash to the VS dash and it goes right indepth about removing the entire dash, with photos at the Street Commodores forum. If you do a search over there it should be one of the top results.
As far as painting goes, I'm going to be using vinyl paint or dye in spray cans where appropriate, maybe a little bit of sanding, some primer, etc. Basically I'm going to follow the instructions that people recommend and do it all right so that when I eventually sell the car, people look inside and go "cool!" rather than "that looks like crap!"
