I agree with a lot of the posts above. 4k is very steep and I never trust a roady unless I know who's doing it. Been a few times getting Carson the road I didn't pick up on a few things and the guy doing the roady would I will let it slide. My late grandfather always told me "believe nothing of what you hear and only half of what you see". Seems like a good outcome none the less

Do you need to take the engine out to put the engine mounts in? One mechanic I just called said no and holden say yes.

I beleive the engine just needs to be jacked up in the engine bay and not removed for the engine mounts. Rear main requires the transmission to be removed to install anew one. Correct me if im wrong?

sokoza is correct, engine mounts can be changed without removing the motor. Rear main seal may also require the sump to be dropped?

No. Support the engine and drop the K-frame and it can be done.
If you liked the car, why didn't you make a deal and have Holden fix it and give the car yard the bill?
