Check your work.
The last thing you worked on is probably the cause so since you replaced the plugs pull them out and make sure they are all fitted correctly and everything else you touched is back where it was when you started.
Get these kind of questions all the time on bike forums such as just changed bars and now fuse is blowing where should I start looking?
Obvious to some that they should start looking at what they last touched but not obvious to them for whatever reason.

Why do you say it's running rich?

I am going to guess because a plug is not firing correctly and that is why it is sluggish as well and probably thrown a code to boot.
But just a guess mind you.

Exactly. Sluggish. With a code. No engine light showing

Mate as above, and if the code was logged after you changed the O2 sensor it could be a problem with the sensor.

No engine light means the code is about a condition that is not present anymore (were the codes cleared after the sensor was changed?) but you could have a new condition developing. Put your scanner in data grid mode and look for any misfires / check your fuel trims. Could be an issue between the plugs and the ignition coils. Make sure the coils are properly pushed onto the plugs.
