Found an English site with a link to the genuine VT-VZ Holden Commodore workshop manual (free download) for those still looking.

I could have done with that information "way back when"!
GM Holden has (or had, past-tense!) a workshop manual on the VZ, but whether such is still available from them is (very) doubtful. Independent service facilities e.g. Repco, have facsimiles these manuals, as they do of so many others. It sounds as ginormous as the later VF workshop manual — all 1.62 gigglebites of it, and devoid of a speedy index search function...ugh—!!

The one I downloaded is fully electronic and searchable using hyperlinks throughout if you have reasonable pdf software. It is a breeze to use. Just need to find a friendly GM rep to get a VF copy onto the interweb thingy for you.

There is a VF one.
There is VE series 1
There is VT
There is VX
There is VY
There is VZ

With some effort, you’ll find the links on the forum.

The VF one is indexed. You have to enable the side bar on the pdf reader you use. Same with VE.

Use Foxit pdf reader. The tabs it creates are easier to go back and forth through the document. Foxit also doesn’t eat up power like adobe does.

Just tried this today. The link (from Dec 2018) still works. Takes about an hour to pre-download. When that's finished, it writes to your hard drive (Downloads folder or however you have your pc set up).

This is the Holden factory manual, not a 3rd-party aftermarket manual. Great, this is the real deal as used by service garages.

Unzip the zip file. Navigate to VTVZ_GHM_SMI > Main Menu.pdf, and open that.

You get link buttons for these service manual options:
VZ / WL Series MY2005 nd MY006
VY / V2 /WK Series 2002-2004
VT / VX / VU / V2 WH Series 1997-2003
Daewoo 2004-
SUP Vehicles 2005-

Following the VZ link, you get to another menu:
Service Information
Service Communications
Warranty Information
Supplementary Information

The actual service manual is a pdf in multiple parts, inside "Service Information". It seems to be complete.
