Excellent idea. I reckon a good red doesn’t keep that well after it’s been opened, so you might as well finish that bottle off rather than let it go to waste.

Mr23 loves to cover the top of the pot with grated cheese after simmering and put it in the over on grill for a while. Sometimes he'll sprinkle a little feta cheese in with it too, everything is better with a little feta.

I love a really tasty bolonaise sauce on toast the next day. I've even made wood oven pizzas with just bolonaise sauce and cheese.

We find with a lot of sauces and stews they get better the next day. Normally we make big batches so the left overs can be used for meals when people are at work etc
