Quickly what screws do I use? Are sheet metal self tapper screws ok ?

Are you sure your tucking the ss lip into the groove on the bumper?

Sorry can't help there. I used the screws that were on the wreck that I salvaged it off. IIRC they are self tappers.

My lip still doesn't sit perfectly, I'm going to have to wait for a hot day and try and stretch it that extra 20mm

Here is where mine is screwed to the front bar (same on both side). How does yours look compared to this ?

It was a pretty tight fit to get it on. Had a mate hold that bit in place while I screwed it on. Would have been too hard with only one pair of hands.
