Thought 11p had fixed the full throttle issue.
But went for a quick drive tonight: rolling from the lights, stomp it from around 10kph, back end lights up and gets all wiggly (closed course road of course),

If engine lights comes on does it record any codes?

Notice with my ute gets 'lively' if nail it anything under 70km/h but cruise at that speed then hit it falls flat then really starts moving at 80km/h...although instead of lean it runs rich enough you can smell it,chews through fuel but otherwise runs well.

Getting aldl cable & nvram 'cos like yours datalogging is only way to work out what is going on.
