looks like your scan tool also has freeze frame data
might be worth having a look
and see if anything unusual leaps out

Clean all the earths on the harnesses. I’ve seen plenty of VEs with corrosion on the main engine bay earth strap even. Disconnect the negative terminal on the battery. Locate the various earth points. Remove them. Clean with some scotchbrite and metho at a minimum or CO Contact cleaner. Wipe clean. Clean threads on the fixings. Retighten.

In this case it’s the starting point.

Check the engine harness plug down near the steering linkage. If water has gotten into that, all hell can break loose. Should have silicone paste in there.

Check the o2 sensor plugs for signs of water ingress into the plug.

Is this happening when, or shortly after rain?
Seems like a good starting point to me! No idea where all the earth points are tho mate. I don't know a hell of a lot about cars unfortunately which isn't helping....... but I'm definitely learning more and more as these issues arise.
